Fabien Siebert
Owner-Chef of Marcel's and Le Saint-Tropez

He’s the Gallic nose on the menu upstairs at Marcel’s Bistro, and the guiding force behind the cuisine of Le Saint Tropez downstairs. Fabien Siebert, a native of the Lorraine region of France (he was born and raised in the village of Folkling, the Moselle region of Lorraine), has been presiding over the Marcel’s kitchen for more than twenty years and Le Saint Tropez for ten. And while both restaurants are significantly “French,” the menus and kitchen technique reflect a more worldly flavour.

As all French cooks do, Fabien began as an apprentice, he at La Grange du Paysan, a restaurant specializing in regional cuisine from Alsace. In 1975 he received his “CAP”(Professional Aptitude Certificate) from the Lycée Technique Hôtelier of Strasbourg.

For four years he worked in several restaurants in the Alsace-Lorraine region of France before working through Germany, Corsica, and one year at the Promenade Hotel in Holland, all of which influenced his cooking.

After his year in Holland, Fabien decided to continue his travels and, in 1980, arrived in Canada. Auberge Gavroche on Avenue Road was his first stop followed by Jazberry’s and Julien Restaurant, both on King Street. Those locations introduced him to the Canadian way of French Cuisine.

In late 1983, Johann Strauss a restaurant located above the very popular restaurant Le Pigalle, at 315 King Street W. became available, and on February 8, 1984, he and his partner, Marcel Réthoré, opened Marcel’s Bistro with Fabien in the kitchen. Five years later, his partner left, but Fabien carried on.

In 1993, Le Pigalle vacated the downstairs and, having had a great deal of success on the second floor for almost 10 years, Fabien took it. The result today is Le Saint Tropez, specializing in the flavours of the South of France.

Andrée Bernard - Chanteuse Extraordinaire
Wednesday to Sunday at Le Saint Tropez

ANDRÉE BERNARD is an artist with a unique ability to excite audiences with her interpretations of popular songs, as well as her own unique compositions. ANDRÉE has a soaring voice and dazzling piano style that can move an audience from swaying to the silkiness of her smooth ballads to rocking with her finger popping jazz or favorite hits.

An exceptional vocalist and accomplished pianist, ANDRÉE has drawn from folk, jazz and blues influences - from Piaf to Gershwin, from Broadway show tunes to Top 40. Her songs capture your soul with sultry blues or astonish you with a run of skat that will make you swear you're listening to Ella.

ANDRÉE studied music at Laval University in the mid 70's, and took voice training with Pierre Boutet and Germain Deblois in Québec. She also studies with David Dunbar in Toronto and Marty Lawrence and Tony Collucic in New York City. Apart from her many achievements and awards, ANDRÉE has toured in both Canada and Europe and appears frequently as a featured soloist on major Canadian TV and radio programs.

ANDRÉE has appeared in Christmas Concerts at Roy Thomson Hall and Hamilton Place, at Toronto's Variety Club, and in community concert series' throughout Ontario and British Columbia. She also appeared on Global TV's Christmas Special and on TVO Ontario's current affairs program Panorama, As well as several performances for CBC Radio. ANDRÉE released her first album at the beginning of 1994 and is currently working on her next recording project.

ANDRÉE performed at the Canada Day Celebration at Queen's Park, and co-hosted the show with Dan Gallahger. Recently ANDRÉE performed as a guest at a special Oscar Peterson tribute concert in Roy Thomson hall, and the DuMaurier jazz Concert in Nathan Phillip's Square. ANDRÉE also performed at the prestigious Festival d'été de Québec and has appeared on the Operation Enfant Soleil Telethon. In addition, she has performed solo shows at the Grand Theatre du Québec, the Tritorium, and the Montréal jazz Festival. She has appeared with the Québec Symphony Orchestra on several occasions, including a special DuMaurier evening with that Orchestra. She has performed throughout Québec, Ontario and Europe, and has fond fans of all ages wherever she has traveled.
